Preparation Steps

  3. Bake the sweet potatoes for about 45-60 minutes until tender.
  4. Let the sweet potatoes cool for 5-10 minutes, then slice in half and scoop out the insides.
  5. In a mixing bowl, mash the potato flesh with butter, sour cream, and milk until smooth.
  6. Add salt, pepper, cinnamon, and nutmeg to the mixture.
  7. Fold in cheddar cheese, green onions, and optional bacon.
  8. Spoon the creamy filling back into the potato skins and mound slightly.
  9. Bake the stuffed potatoes for an additional 15-20 minutes until bubbly and golden brown.
  10. Cool for 5 minutes before serving.
