Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a skillet, sauté 1 pound of shrimp for 3–5 minutes until pink and opaque.
  3. Bring 4 cups of water to a boil in a saucepan and whisk in 1 cup of grits, cooking for 5–7 minutes.
  4. Fold in 1 to 2 cups of shredded cheese and diced vegetables into the thickened grits.
  5. Gently mix in the sautéed shrimp and 1 tablespoon of Cajun seasoning.
  6. In a separate bowl, beat 2 eggs and mix into the shrimp and grits mixture.
  7. Pour the mixture into the baking dish and bake for 30–35 minutes until golden.
  8. Let it cool slightly, garnish with herbs, and serve warm.
