Step-by-Step Instructions

  2. Peel away the outer layers of the garlic head and slice off the top. Drizzle with olive oil, wrap in foil.
  3. Roast the wrapped garlic on a baking sheet for 30–35 minutes until soft and golden brown.
  4. Allow garlic to cool for 10 minutes, then squeeze the roasted cloves into a bowl, discarding the skins.
  5. In a mixing bowl, combine mayonnaise, roasted garlic, lemon juice, mustard, salt, and pepper. Whisk until smooth.
  6. If desired, drizzle in olive oil while whisking for a richer flavor.
