  • 6 large Eggs preferably large for the best consistency
  • 1 cup Ricotta Cheese part-skim is ideal, cottage cheese is a substitute
For Seasoning
  • 1 teaspoon Salt adjust based on preference
  • 1/2 teaspoon Pepper can add fresh herbs or spices to elevate taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (165°C). Gather mixing bowl, whisk, silicone molds, and baking pan for water bathing.
  2. In a mixing bowl, combine large eggs, ricotta cheese, salt, and pepper. Blend until smooth, about 1-2 minutes.
  3. Place silicone molds in the baking pan, fill each mold about three-quarters full with the egg mixture.
  4. Pour hot water into the baking pan around the molds, reaching halfway up the sides.
  5. Bake for 25-35 minutes until they no longer jiggle when shaken.
  6. Cool for about 5-10 minutes before releasing from molds.
  7. Pop each egg bite out and store in an airtight container.
