- Preheat your oven to 325°F (165°C). Gather mixing bowl, whisk, silicone molds, and baking pan for water bathing.
- In a mixing bowl, combine large eggs, ricotta cheese, salt, and pepper. Blend until smooth, about 1-2 minutes.
- Place silicone molds in the baking pan, fill each mold about three-quarters full with the egg mixture.
- Pour hot water into the baking pan around the molds, reaching halfway up the sides.
- Bake for 25-35 minutes until they no longer jiggle when shaken.
- Cool for about 5-10 minutes before releasing from molds.
- Pop each egg bite out and store in an airtight container.
