  • 1 cup Shredded Cheddar Cheese Monterey Jack can be used for milder flavor.
  • 1 cup Grated Parmesan Cheese Nutritional yeast can be used as a dairy-free alternative.
For Flavoring
  • 1 teaspoon Dried Thyme Fresh thyme can be substituted (use three times the amount).
  • 1 teaspoon Dried Rosemary Fresh may also be substituted (use three times the amount).
  • Salt Essential for flavoring.
  • Pepper Essential for flavoring.
  • 2 tablespoons Fresh Parsley For garnish, adding color and fresh finish.

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C) to ensure even cooking.
  2. In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
  3. Add diced chicken breasts to the skillet, cooking for 5-7 minutes until browned and cooked through.
  4. Remove the chicken and set aside. Pour in chicken broth and heavy cream, stirring in cheddar and Parmesan until smooth.
  5. Add thyme and rosemary along with salt and pepper to the sauce and let simmer for 3-5 minutes.
  6. Fold cubed potatoes into the sauce and mix in the cooked chicken.
  7. Transfer mixture to a greased 9x13-inch baking dish and spread evenly.
  8. Bake for 25-30 minutes until chicken is cooked and potatoes are tender.
  9. Let the dish rest for 5 minutes before serving.
  10. Garnish with freshly chopped parsley before serving.
