  • 2 cups sweet corn drained
  • 1 can black beans rinsed and drained
  • 1 can Rotel tomatoes can be substituted with diced tomatoes and green chilies
  • 1 large bell pepper chopped, preferably red or yellow
  • 1 cup shredded cheddar cheese or dairy-free cheese
  • 2 cups Fritos add just before serving
For the Dressing
  • 1 cup sour cream can substitute with dairy-free yogurt
  • 2 tablespoons olive oil extra virgin preferred
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • to taste salt
  • to taste pepper

Method
 

Preparation Steps
  1. In a small mixing bowl, whisk together sour cream, olive oil, salt, and pepper until smooth and creamy. Incorporate garlic powder, onion powder, and cumin until fully combined.
  2. In a large bowl, combine sweet corn, black beans, Rotel tomatoes, and chopped bell pepper. Gently fold together until evenly mixed.
  3. Pour the prepared dressing over the salad ingredients and fold until everything is evenly coated.
  4. Before serving, gently fold in Fritos to preserve their crunch.
  5. Garnish with extra Fritos, shredded cheddar cheese, or fresh cilantro before serving.
