Step-by-Step Instructions
  1. In a 12 x 8 inch baking dish, whisk together coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil until smooth.
  2. Grate in fresh garlic and ginger into the mixture, mixing thoroughly.
  3. Preheat your oven to 400°F (200°C).
  4. Wash and chop the bok choy and slice the zucchini. Add them to the curry broth.
  5. Carefully arrange the frozen dumplings on top of the vegetable and curry mixture.
  6. Cover the dish with foil and bake for 20 minutes.
  7. Remove the foil and return the dish to the oven, baking for an additional 5-10 minutes.
