Cooking Steps
  1. Cook the bacon in a large skillet on low heat for 10-12 minutes until crisp. Transfer to a paper towel-lined plate to cool and chop.
  2. Using the bacon drippings, increase heat to medium-high, season and sear the chicken until golden brown, about 5-7 minutes. Set aside.
  3. Cook the rotini pasta in boiling salted water for 8-10 minutes until al dente, then drain, reserving a cup of pasta water.
  4. In the same skillet, melt butter over medium-low heat, sauté garlic, whisk in flour, then slowly stir in half and half, simmering until thickened.
  5. Mix in ranch seasoning and cheddar cheese until melted, then fold in cooked pasta and chicken.
  6. Top with chopped bacon, mix lightly, and serve warm with optional cheese or herbs.
