- Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish with olive oil.
- Slice the chicken breasts in half horizontally and pound to about 1/2 inch thick.
- Whisk together olive oil, minced garlic, Italian seasoning, salt, and pepper. Coat chicken with marinade and let sit for 15-30 minutes.
- Sauté fresh spinach in a skillet over medium heat for 2-3 minutes until wilted.
- In a mixing bowl, beat cream cheese until smooth. Stir in sautéed spinach and half of the mozzarella cheese.
- (Optional) Sear marinated chicken in a hot skillet for 1-2 minutes on each side.
- Layer marinated chicken in the baking dish and spoon spinach and cream cheese mixture over the chicken. Top with remaining mozzarella.
- Bake for 20-30 minutes until chicken reaches 165°F (75°C) and cheese is melted and golden.
