- Preheat your oven to 375°F (190°C). Prepare all ingredients while the oven heats.
- Cut chicken breasts into bite-sized pieces and heat a tablespoon of olive oil in a large skillet over medium heat. Cook chicken for 6-8 minutes until browned and fully cooked through.
- Add more olive oil if needed, then toss in chopped onion. Sauté for 3-5 minutes until translucent. Add minced garlic, stirring for an additional minute.
- Stir in cream of mushroom soup and cream of chicken soup. Pour in milk while stirring constantly, then mix in Parmesan cheese, chopped parsley, black pepper, and salt. Simmer for 5-7 minutes.
- Add heavy cream and mozzarella cheese to the sauce, stirring until smooth. Remove from heat.
- Grease a 9x13 inch baking dish with olive oil. Layer half of the sauce on the bottom, followed by the cooked chicken, and then the remaining sauce.
- Spread the cooked tater tots evenly over the top, and sprinkle optional shredded cheddar cheese.
- Bake for 20-25 minutes until tater tots are golden-brown and cheese is bubbly. Allow to rest for 10 minutes before serving.
