Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C). Prepare all ingredients while the oven heats.
  2. Cut chicken breasts into bite-sized pieces and heat a tablespoon of olive oil in a large skillet over medium heat. Cook chicken for 6-8 minutes until browned and fully cooked through.
  3. Add more olive oil if needed, then toss in chopped onion. Sauté for 3-5 minutes until translucent. Add minced garlic, stirring for an additional minute.
  4. Stir in cream of mushroom soup and cream of chicken soup. Pour in milk while stirring constantly, then mix in Parmesan cheese, chopped parsley, black pepper, and salt. Simmer for 5-7 minutes.
  5. Add heavy cream and mozzarella cheese to the sauce, stirring until smooth. Remove from heat.
  6. Grease a 9x13 inch baking dish with olive oil. Layer half of the sauce on the bottom, followed by the cooked chicken, and then the remaining sauce.
  7. Spread the cooked tater tots evenly over the top, and sprinkle optional shredded cheddar cheese.
  8. Bake for 20-25 minutes until tater tots are golden-brown and cheese is bubbly. Allow to rest for 10 minutes before serving.
