Step-by-Step Instructions for Baked Elote Dip
- Preheat your oven to 350℉ (175℃) and adjust the oven racks.
- Add 1 tablespoon of olive oil to a 10-inch ovenproof skillet over medium heat and let it heat for 1-2 minutes.
- Add the white and light-green parts of the scallions, seasoning with a pinch of kosher salt, and sauté for 2-3 minutes.
- Stir in 2 cups of frozen corn kernels along with Tajin or Everything but the Elote seasoning and sauté for another 3-5 minutes.
- Reduce the heat to low, add 8 oz of cream cheese, and stir continuously until melted, about 2-3 minutes.
- Remove from heat, fold in 1 cup of light sour cream and ¾ cup of Cotija cheese, mixing until smooth.
- Transfer the skillet to the oven and bake for 10-12 minutes until edges bubble and turn golden brown.
- Switch to broil, sprinkle remaining Cotija cheese on top, and broil for 2-3 minutes, watching closely.
- Garnish with dark green parts of the scallions and fresh cilantro. Serve warm with tortilla chips or fresh veggies.
