  • 1 tablespoon Tajin or Everything but the Elote Seasoning Adjust to your taste preference.
  • 8 oz Cream Cheese (⅓ less fat) Regular cream cheese can add more richness if desired.
  • 1 cup Light Sour Cream Greek yogurt can be a great substitution for extra protein.
  • ¾ cup Cotija Cheese Feta can be used as an alternative.
  • ¼ cup Cilantro Omit if you're not a fan of cilantro.

Method
 

Step-by-Step Instructions for Baked Elote Dip
  1. Preheat your oven to 350℉ (175℃) and adjust the oven racks.
  2. Add 1 tablespoon of olive oil to a 10-inch ovenproof skillet over medium heat and let it heat for 1-2 minutes.
  3. Add the white and light-green parts of the scallions, seasoning with a pinch of kosher salt, and sauté for 2-3 minutes.
  4. Stir in 2 cups of frozen corn kernels along with Tajin or Everything but the Elote seasoning and sauté for another 3-5 minutes.
  5. Reduce the heat to low, add 8 oz of cream cheese, and stir continuously until melted, about 2-3 minutes.
  6. Remove from heat, fold in 1 cup of light sour cream and ¾ cup of Cotija cheese, mixing until smooth.
  7. Transfer the skillet to the oven and bake for 10-12 minutes until edges bubble and turn golden brown.
  8. Switch to broil, sprinkle remaining Cotija cheese on top, and broil for 2-3 minutes, watching closely.
  9. Garnish with dark green parts of the scallions and fresh cilantro. Serve warm with tortilla chips or fresh veggies.

Notes

Keep a close eye on the broiler; it can quickly turn from golden to burnt. Allow to cool slightly before serving.
