Method
 

Preparation Steps
  1. Gather all ingredients and equipment. Chop two tart apples and finely dice one onion.
  2. Melt 2 tablespoons of butter in a large pot over medium heat.
  3. Add diced onions and sauté until translucent, about 5 minutes.
  4. Add the chopped apples and thyme, cooking for another 5-7 minutes until apples are tender.
  5. Pour in 4 cups of broth, bring to a gentle boil, then reduce heat and simmer for about 10 minutes.
  6. Blend the soup until velvety smooth using a blender or immersion blender.
  7. Stir in 1 to 2 cups of cheddar cheese and ½ cup of cream over low heat until melted.
  8. Adjust seasoning with salt and pepper, then ladle into bowls and garnish with herbs.
