For the Vanilla Glaze
  • 1 cup Powdered Sugar or a sugar alternative
  • 2 tablespoons Milk or Heavy Cream use plant-based milk for dairy-free

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan lined with parchment paper.
  2. In a stand mixer, cream the butter, granulated sugar, and light brown sugar on medium speed for about 3 minutes.
  3. Add the egg and vanilla extract, mixing on low speed until fully incorporated.
  4. Add flour, baking powder, and salt to the mixer, mixing gently until a soft dough forms.
  5. Reserve about 2 cups of the dough for topping and spread the remaining dough evenly in the pan.
  6. Bake the crust for 15 minutes until lightly golden brown.
  7. In a large bowl, mix fresh cranberries, sugar, cornstarch, orange zest, and juice until the cranberries are coated.
  8. Pour the cranberry filling over the cooled crust evenly.
  9. Sprinkle the reserved dough over the filling, allowing some cranberries to peek through.
  10. Bake for an additional 45 minutes, covering with foil for the last 10-15 if needed.
  11. Let the bars cool completely before slicing.
  12. Whisk the powdered sugar, milk, and vanilla extract together, then drizzle over the cooled bars.
