Step-by-Step Instructions for Potsticker Soup
  1. In a large pot, heat 2 tablespoons of sesame oil over medium heat for about 1-2 minutes until it shimmers. Add 2 minced garlic cloves and 1 tablespoon of grated ginger, sautéing for approximately 1 minute until fragrant.
  2. Pour in 4 cups of vegetable broth, along with 3 tablespoons of soy sauce and 1 tablespoon of rice vinegar. Stir the mixture gently and bring it to a gentle simmer over medium heat for 5-10 minutes.
  3. Carefully drop in about 12-15 frozen potstickers, making sure they’re evenly distributed. Cook them for 5-7 minutes until tender.
  4. With 2 minutes left on the timer, add your choice of sliced mushrooms or fresh spinach to the broth. Stir gently and let the vegetables soften.
  5. Taste the soup and adjust the seasoning with salt, pepper, or chili oil/red pepper flakes.
  6. Ladle the hot Potsticker Soup into bowls and garnish with chopped green onions.
