Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking dish by lining it with parchment paper or greasing it.
  2. Whisk the eggs in a large mixing bowl until smooth and slightly frothy.
  3. Gently fold in the cottage cheese until just incorporated, allowing some curds to remain.
  4. Add diced red bell pepper, chopped spinach, chopped green onions, and cheddar cheese, stirring gently.
  5. Sprinkle in garlic powder, onion powder, salt, and black pepper, mixing thoroughly.
  6. If using, stir in the cooked turkey bacon.
  7. Transfer the mixture to the prepared baking dish and spread it evenly.
  8. Bake for 30-35 minutes until the center is set and the top is golden.
  9. Allow to cool for 10 minutes, then slice into 9 equal bars.
