Ingredients
  

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup unsalted butter softened
  • 1/4 cup honey

Method
 

  1. Preheat your waffle maker according to the manufacturer's instructions.
  2. In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar until well combined.
  3. In another bowl, beat the egg, then add the milk and vegetable oil, mixing until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. Lightly grease the waffle maker with cooking spray or a little oil. Pour about 1/4 cup of the batter into the center of the waffle maker and close the lid. Cook until golden brown and crispy, about 3-5 minutes. Repeat with the remaining batter.
  6. While the waffles are cooking, prepare the honey butter syrup by mixing the softened butter and honey together in a small bowl until smooth.
  7. Serve the cornbread waffle bites warm, drizzled with honey butter syrup.
