- Peel and cut potatoes into 1-inch cubes, cover with cold water, add salt and bay leaves, and boil for about 20 minutes.
- Heat butter in a skillet, add chopped shallots and garlic, sauté for 2-3 minutes, then add kale and steam for 5-7 minutes.
- Drain potatoes, return to pot, add butter, milk, salt, pepper, and nutmeg, mash together and fold in the kale mixture.
- Cook the smoked sausage as per your method until heated through, around 5-10 minutes.
- Serve mashed potatoes and kale onto warm plates, top with sausage slices, and drizzle olive oil.
