Ingredients
  

For the Mash
  • 4 cups Potatoes Starchy varieties preferred
  • 2 cups Curly Kale Can substitute with spinach
  • 1 cup Shallots Mild onions can be a substitute
  • 2 cloves Garlic Optional
  • 4 tablespoons Butter Olive oil for dairy-free
  • 1/2 cup Milk Plant-based works for dairy-free
  • to taste Salt & Pepper Adjust to preference
  • 1/4 teaspoon Nutmeg Freshly grated preferred
For the Topping
  • 1 package Smoked Sausage e.g., Rookworst or Polish kielbasa

Method
 

Step-by-Step Instructions
  1. Peel and cut potatoes into 1-inch cubes, cover with cold water, add salt and bay leaves, and boil for about 20 minutes.
  2. Heat butter in a skillet, add chopped shallots and garlic, sauté for 2-3 minutes, then add kale and steam for 5-7 minutes.
  3. Drain potatoes, return to pot, add butter, milk, salt, pepper, and nutmeg, mash together and fold in the kale mixture.
  4. Cook the smoked sausage as per your method until heated through, around 5-10 minutes.
  5. Serve mashed potatoes and kale onto warm plates, top with sausage slices, and drizzle olive oil.
