  • 1 pound Shrimp, deveined frozen for convenience
  • 1 cup Lump Crab Meat imitation crab works well too
  • 2 cups Frozen Mixed Vegetables mix of peas, carrots, and corn
  • 2 tablespoons Butter can use olive oil
  • 1/4 cup All-Purpose Flour or gluten-free flour
  • 1 cup Seafood Stock or chicken broth
  • 1/2 cup Heavy Cream or milk/non-dairy alternatives
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • 1 teaspoon Onion Powder or fresh onions
  • 1 teaspoon Dried Thyme or fresh thyme
  • to taste Salt
  • to taste Pepper
For the Biscuit Topping
  • 2 cups Cheddar Bay Biscuit Mix or homemade mix
  • 1 cup Shredded Cheddar Cheese any sharp cheese
  • 3/4 cup Milk or non-dairy milk

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Melt 2 tablespoons of butter in a skillet over medium heat. Cook shrimp for 3-4 minutes until pink, then stir in crab meat and frozen vegetables for another minute.
  3. Sprinkle 1/4 cup of flour over the seafood mixture, stirring constantly, and cook for another minute. Slowly add 1 cup of seafood stock and 1/2 cup of heavy cream, stirring until it simmers and thickens, about 5 minutes.
  4. Remove from heat and season filling with 1 teaspoon each of garlic powder, onion powder, and thyme, plus salt and pepper to taste.
  5. Pour the filling into a greased 9x13-inch baking dish.
  6. In a bowl, combine 2 cups of biscuit mix, 1 cup cheese, and 3/4 cup milk. Mix until a soft, slightly sticky dough forms.
  7. Dollop the biscuit dough over the filling, leaving gaps for the biscuits to rise.
  8. Bake for 25-30 minutes or until the topping is golden brown and filling is bubbling.
  9. Let the pot pie cool for about 15 minutes.
  10. Serve warm and enjoy!
