Coconut Rice Krispie Treats are a delightful twist on the classic treat, infused with sweetened shredded coconut for a tropical flavor.

Ingredients
  

  • 3 tablespoons unsalted butter
  • 1 package 10 oz mini marshmallows
  • 1 teaspoon vanilla extract
  • 6 cups Rice Krispies cereal
  • 1 ½ cups sweetened shredded coconut

Method
 

  1. In a large saucepan over low heat, melt the butter. Once melted, add the mini marshmallows and stir continuously until completely melted and smooth. Remove from heat and stir in the vanilla extract.
  2. Add the Rice Krispies cereal to the marshmallow mixture and stir until well combined. Then, fold in the shredded coconut until evenly distributed.
  3. Grease a 9x13-inch baking dish with butter or cooking spray. Pour the mixture into the dish and press it down evenly with a spatula or your hands (lightly greased to prevent sticking).
  4. Allow the treats to cool at room temperature for about 30 minutes before cutting them into squares.

Notes

  • For a tropical twist, try adding chopped dried pineapple or macadamia nuts to the mixture.
