Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine warm water, sugar, and active dry yeast. Allow to sit for 5–10 minutes until foamy.
  2. In a large mixing bowl, blend all-purpose flour and salt, add the yeast mixture and olive oil, stir until a soft dough forms.
  3. Knead dough on a floured surface for about 10 minutes until smooth and elastic. Let rise in an oiled bowl for 1 hour.
  4. Whisk together cinnamon and brown sugar for the filling, set aside.
  5. Roll the dough into a rectangle, spread the filling, roll tightly into a log, twist into a spiral shape.
  6. Place into a greased baking dish, cover and let rise for 30–45 minutes.
  7. Preheat oven to 375°F (190°C). Bake for about 25 minutes until golden brown.
  8. Cool in the pan for 10 minutes, then on a wire rack. Serve warm or at room temperature.
