For the Swirl
  • 1 tablespoon ground cinnamon Freshly ground offers a more robust taste.
  • 1/4 cup brown sugar Can be substituted with coconut sugar.

Equipment

  • 9x5-inch loaf pan
  • Mixing bowls
  • Whisk
  • knife or skewer

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
  2. Mash 3-4 ripe bananas in a large mixing bowl. Stir in 1/2 cup of melted unsalted butter, 3/4 cup of granulated sugar, 1 egg, and 1 teaspoon of vanilla extract until combined.
  3. In a separate bowl, whisk together 1.5 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/4 teaspoon of salt. Gradually add this to the wet mixture, stirring until incorporated.
  4. Mix 1/4 cup of brown sugar with 1 tablespoon of ground cinnamon to create the cinnamon swirl mixture.
  5. Pour half of the banana batter into the prepared pan, sprinkle half of the cinnamon mixture over it, layer the remaining batter, then top with the rest of the cinnamon mixture.
  6. Gently swirl through the batter with a knife to create a marbled effect. Be careful not to overmix.
  7. Bake for 60-70 minutes, checking doneness with a toothpick. Tent with foil if the top browns too quickly.
  8. Cool in the pan for 10 minutes before turning out onto a wire rack to cool completely before slicing.
