Ingredients

For the Roll-Ups
  • 6 slices White Sandwich Bread Fresh bread works best.
  • 2 tablespoons Butter (melted) Margarine or coconut oil can substitute.
  • 1 tablespoon Brown Sugar Can swap with white sugar if needed.
  • 1 teaspoon Ground Cinnamon Adjust to your preference.
For the Egg Mixture
  • 3 large Eggs An egg substitute can be used for a vegan option.
  • 1/2 cup Milk Almond or oat milk for dairy-free.
  • 1 teaspoon Vanilla Extract Optional, enhances flavor.
For Frying
  • 2 tablespoons Butter Non-stick spray can be used as a fast alternative.

Equipment

  • non-stick skillet
  • Rolling Pin
  • shallow bowl
  • Spatula

Method

Step-by-Step Instructions
  1. Preheat work surface, slice off crusts from the white sandwich bread, and flatten each slice with a rolling pin to about 1/4 inch thick.
  2. In a small bowl, combine the melted butter, brown sugar, and ground cinnamon. Spread the filling evenly over each flattened slice, leaving edges bare.
  3. Roll each slice tightly from one end to the other, pinching and sealing edges to contain the filling.
  4. In a shallow bowl, whisk together eggs, milk, vanilla extract, and cinnamon. This mixture will coat the roll-ups.
  5. Heat a non-stick skillet over medium heat, add butter, dip each roll-up briefly in egg mixture, and place seam-side down. Cook for 2-3 minutes until golden brown.
  6. Transfer cooked roll-ups to a serving plate, serve warm with powdered sugar, maple syrup, or whipped cream.
  7. If there are leftovers, let them cool and store in an airtight container in the refrigerator. Reheat as needed.
