Method
 

  1. Open the can of jellied cranberry sauce and carefully slice it into approximately ½-inch thick discs.
  2. Place the baking sheet with cranberry discs in the freezer and chill them for at least 30 minutes.
  3. In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Heat in the microwave for 1 minute, then stir.
  4. Once the cranberry discs are frozen solid, dip each disc into the melted chocolate.
  5. Gently place the chocolate-covered cranberry discs back onto the baking sheet.
  6. Return the baking sheet to the freezer and chill the chocolate-coated bites for another 30 minutes.
