Ingredients

  • 2 large croissants
  • 1 cup cooked chicken shredded
  • 1/2 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • 1 cup romaine lettuce chopped
  • 1/4 cup cherry tomatoes halved
  • Salt and pepper to taste
  • Optional: extra Parmesan for garnish

Method

  1. Preheat your oven to 350°F (175°C). If you prefer a warm sandwich, you can lightly toast the croissants in the oven for about 5 minutes.
  2. In a mixing bowl, combine the shredded chicken, Caesar dressing, and grated Parmesan cheese. Stir until the chicken is well coated.
  3. Season the mixture with salt and pepper to taste.
  4. Slice the croissants in half horizontally. If you toasted them, let them cool slightly before assembling.
  5. On the bottom half of each croissant, layer the chopped romaine lettuce and cherry tomatoes.
  6. Spoon the chicken mixture generously over the lettuce and tomatoes.
  7. Place the top half of the croissant on each sandwich and press down gently.
  8. If desired, sprinkle extra Parmesan cheese on top for garnish.
  9. Serve immediately or wrap in foil to keep warm until ready to eat.
