Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the shredded mozzarella, grated Parmesan, almond flour, egg, garlic powder, oregano, salt, black pepper, and red pepper flakes (if using).
Mix the ingredients until well combined and a dough forms. If the mixture is too sticky, add a little more almond flour.
Using your hands, form small balls (about 1 inch in diameter) and place them on the prepared baking sheet, leaving space between each ball.
Lightly spray or brush the tops of the cheese balls with cooking spray or olive oil.
Bake in the preheated oven for 12-15 minutes, or until golden brown and bubbly.
Remove from the oven and let cool for a few minutes before serving.
