Ingredients
  

  • 1 cup fresh or frozen corn kernels
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped green onions
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil for frying

Method
 

  1. In a large bowl, combine the corn, flour, baking powder, salt, and black pepper. Mix well to combine.
  2. Stir in the shredded cheddar cheese and chopped green onions.
  3. In a separate bowl, whisk together the egg and milk until well combined.
  4. Pour the egg mixture into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. Heat the vegetable oil in a large skillet over medium heat.
  6. Once the oil is hot, drop spoonfuls of the batter into the skillet, flattening them slightly with the back of the spoon.
  7. Cook for about 3-4 minutes on each side or until golden brown and crispy.
  8. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
  9. Serve warm with your favorite dipping sauce or enjoy them plain.
