For the Vegetables
  • 1 cup Red Bell Pepper
  • 1 cup Yellow Bell Pepper
  • 1 cup Green Bell Pepper
  • 1 cup Corn (Fresh or Frozen) Canned corn or black beans can be used.
  • 1 cup Diced Tomatoes Canned tomatoes are an alternative.
For the Topping
  • 1 cup Shredded Cheddar Cheese Monterey Jack or Pepper Jack for a spicy twist.
  • to taste Sour Cream (optional) Substitute with Greek yogurt if preferred.
  • 1 tbsp Fresh Cilantro (optional for garnish) Parsley is an alternative.

Cooking Instructions
  1. Cut the chicken into bite-sized pieces and season with chili powder, cumin, paprika, salt, and pepper. Let sit for 5 minutes.
  2. Heat olive oil in a large skillet over medium-high heat for 2-3 minutes until shimmering.
  3. Add the seasoned chicken to the skillet and cook for 5-7 minutes until golden brown and cooked through. Remove chicken temporarily.
  4. In the same skillet, add sliced bell peppers and sauté for about 5 minutes until softened and slightly caramelized.
  5. Stir in corn and diced tomatoes; cook for an additional 3-5 minutes until bubbling gently.
  6. Reduce heat to low, sprinkle cheddar cheese over the mixture, cover, and let sit for 2-3 minutes until cheese is melted.
  7. Garnish with chopped cilantro and serve with sour cream or Greek yogurt if desired.
