Ingredients
  

  • 2 large russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup shredded cheddar cheese
  • ¼ cup sliced green onions
  • ¼ cup sour cream for serving

Method
 

  1. Preheat your oven to 425°F.
  2. Wash and peel the potatoes, then cut them into thin fries.
  3. Rinse the fries in cold water to remove excess starch, then pat them dry with a clean towel.
  4. In a large bowl, toss the fries with olive oil, paprika, garlic powder, onion powder, cayenne pepper, oregano, salt, and black pepper until evenly coated.
  5. Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  7. Remove the fries from the oven and sprinkle the shredded cheddar cheese on top.
  8. Return to the oven for an additional 5 minutes, or until the cheese is melted.
  9. Once out of the oven, top with sliced green onions and serve with sour cream on the side.
