Ingredients
  

  • 3 tablespoons olive oil
  • 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 pound smoked sausage sliced
  • 1 medium onion diced
  • 1 bell pepper diced (any color)
  • 3 cloves garlic minced
  • 1 cup long-grain white rice
  • 1 can 14.5 ounces diced tomatoes, undrained
  • 2 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 green onions sliced (for garnish)
  • Fresh parsley chopped (for garnish)

Method
 

  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and sausage slices. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  2. In the same skillet, add the onion and bell pepper. Sauté for about 3-4 minutes until softened. Add the garlic and cook for an additional 1 minute until fragrant.
  3. Stir in the rice, diced tomatoes (with juices), chicken broth, Cajun seasoning, thyme, salt, and pepper. Bring the mixture to a boil.
  4. Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.
  5. Return the cooked chicken and sausage to the skillet. Stir to combine and heat through for another 2-3 minutes.
  6. Remove from heat and let it sit covered for 5 minutes before serving. Garnish with sliced green onions and chopped parsley.
