Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat 2 tablespoons of avocado oil over medium-high heat. Season chicken breasts with sea salt and black pepper, then sauté for 5-7 minutes until golden brown.
  3. Transfer cooked chicken to a greased 8x8-inch baking dish.
  4. In the same skillet, mix chopped Roma tomatoes, minced garlic, dried oregano, and a splash of balsamic vinegar and spread over the chicken.
  5. Sprinkle mozzarella cheese generously over the top of the casserole.
  6. Bake uncovered for 18-20 minutes until the cheese is melted and bubbly.
  7. Let the casserole rest for about 5 minutes before serving.
  8. Garnish with fresh basil leaves and serve.
