Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease an 8x8 baking dish.
  2. In a large skillet, heat avocado or olive oil over medium-high heat. Season chicken breasts with salt and pepper and cook for 5–7 minutes on each side until golden brown.
  3. Transfer the cooked chicken to the baking dish, then scatter Roma tomatoes, oregano, minced garlic, and balsamic vinegar over the chicken. Top with shredded mozzarella cheese.
  4. Bake uncovered for 18–20 minutes until cheese is bubbly and edges are golden brown.
  5. Let the casserole rest for 5 minutes before serving to allow flavors to meld.
