  • 6 large Eggs
  • 1 cup Cottage Cheese Substitute with ricotta if preferred
  • 1 cup Cheddar Cheese Shredded, sharp cheddar recommended
  • 1 teaspoon Black Pepper Adjust to taste
  • 1 teaspoon Salt Modify based on dietary needs
For the Filling
  • 1 cup Broccoli Chopped, can substitute with bell peppers, mushrooms, or spinach
  • 1 cup Spinach Fresh preferred for texture

Method
 

Steps
  1. Preheat your oven to 300°F (150°C). Spray a silicone muffin tray with non-stick cooking spray.
  2. In a blender, combine eggs, cottage cheese, half of the cheddar cheese, salt, and black pepper. Blend until smooth.
  3. Pour the egg mixture into the muffin tray, filling each slot halfway.
  4. Evenly distribute chopped broccoli and spinach over the egg mixture. Sprinkle remaining cheddar on top.
  5. Add extra salt and pepper if desired. Bake for about 30 minutes until puffed and firm around the edges.
  6. Remove from the oven, let cool for 5 minutes, then run a knife around the edges and lift out.
