In a large skillet, heat olive oil over medium heat. Add the diced bell peppers and sauté for about 3-4 minutes until they are tender.
In a bowl, whisk together the scrambled eggs, cooked sausage, sautéed bell peppers, cheddar cheese, green onions, taco seasoning (if using), salt, and pepper until well combined.
Warm the flour tortillas in a dry skillet or microwave for about 20 seconds to make them pliable.
Spoon about 1/4 cup of the egg mixture onto the center of each tortilla. Roll the tortilla tightly around the filling, folding in the sides as you go to secure the filling.
Place the rolled taquitos seam-side down in the skillet. Cook for about 2-3 minutes on each side until golden brown and crispy.
Remove from the skillet and let cool slightly before serving with sour cream and salsa.
