Ingredients
  

  • 4 whole English muffins split in half
  • 4 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cooked breakfast sausage crumbled
  • 1/2 cup diced bell peppers any color
  • 1/4 cup diced onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil spray or butter for greasing

Method
 

  1. Preheat your oven to 375°F.
  2. Place the English muffin halves on a baking sheet, cut side up. Lightly spray or butter the tops.
  3. In a skillet over medium heat, sauté the diced onion and bell peppers until they are soft, about 3-4 minutes.
  4. In a bowl, whisk together the eggs, garlic powder, Italian seasoning, salt, and pepper.
  5. Pour the egg mixture into the skillet with the sautéed vegetables and cook, stirring gently, until the eggs are just set, about 3-4 minutes.
  6. Evenly distribute the cooked sausage over the English muffin halves.
  7. Spoon the scrambled egg mixture on top of the sausage.
  8. Sprinkle the shredded mozzarella cheese over each muffin half.
  9. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let cool for a minute before serving.
