  • 1/4 cup Bourbon Use additional peach preserves for non-alcoholic version.
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Apple Cider Vinegar
  • 1 tablespoon Dijon Coarse Ground Mustard Yellow mustard can be used as an alternative.
  • 2 cloves Garlic (minced)
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • 1/2 teaspoon Red Pepper Flakes Adjust or omit based on spice preference.
For the Salmon
  • 4 filets Salmon Filets About 1½ pounds, skins on.
For the Peaches
  • 2 medium Peaches Pitted and thinly sliced.
For Garnish
  • 1 tablespoon Parsley Chopped, for garnish.

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together the peach preserves, bourbon, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes until smooth.
  2. Place the salmon filets into a resealable plastic bag and pour in the remaining marinade. Seal tightly and gently massage to ensure even coating.
  3. Preheat your oven to 375°F.
  4. In an oven-safe skillet, heat olive oil over medium-high heat. Add the marinated salmon filets skin-side up and sear for 2-3 minutes until golden brown.
  5. Carefully flip the salmon to skin-side down and cook for an additional 2-3 minutes.
  6. Add the reserved marinade and sliced peaches around the salmon. Transfer the skillet to the oven and bake for 12-15 minutes.
  7. Once cooked, carefully remove the skillet and plate the salmon with roasted peaches. Garnish with parsley.
