- In a medium bowl, whisk together the peach preserves, bourbon, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes until smooth.
- Place the salmon filets into a resealable plastic bag and pour in the remaining marinade. Seal tightly and gently massage to ensure even coating.
- Preheat your oven to 375°F.
- In an oven-safe skillet, heat olive oil over medium-high heat. Add the marinated salmon filets skin-side up and sear for 2-3 minutes until golden brown.
- Carefully flip the salmon to skin-side down and cook for an additional 2-3 minutes.
- Add the reserved marinade and sliced peaches around the salmon. Transfer the skillet to the oven and bake for 12-15 minutes.
- Once cooked, carefully remove the skillet and plate the salmon with roasted peaches. Garnish with parsley.
