Ingredients
  

  • 2 salmon fillets about 6 ounces each
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh peaches pitted and diced
  • 1/4 cup bourbon
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • 1 tablespoon lemon juice

Method
 

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it.
  2. In a small bowl, mix together the bourbon, honey, Dijon mustard, thyme, and lemon juice. Set aside.
  3. Place the salmon fillets on the prepared baking sheet. Drizzle the olive oil over the fillets and season with salt and pepper.
  4. Spread the diced peaches evenly over the salmon fillets. Pour the bourbon mixture over the top of the salmon and peaches.
  5. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and is cooked through.
  6. Remove from the oven and let it rest for a few minutes before serving.

Notes
