Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F) and prepare your baking tray with parchment paper.
  2. Roll out the chilled puff pastry to about 1/8 inch thick and cut out 12 to 16 rounds.
  3. Transfer the pastry rounds to the baking tray, prick with a fork, brush with egg, and bake for 15-20 minutes until golden brown.
  4. In a saucepan, combine blueberries, sugar, lemon juice, and water over medium heat for 5-7 minutes. Thicken with cornstarch slurry.
  5. Whip heavy cream, mascarpone, powdered sugar, and vanilla until stiff peaks form, about 3-5 minutes.
  6. Assemble the dessert by layering whipped cream and blueberry compote between pastry rounds.
  7. Decorate with cream rosettes, fresh blueberries, and a dust of powdered sugar.
  8. Serve immediately or store components separately to maintain crispness.
