- In a large mixing bowl, combine cooked shredded chicken, drained red onion, chopped cilantro, and diced avocado. Mix well and chill for about 30 minutes.
- In a food processor, blend cottage cheese, mayonnaise, onion powder, lime juice, cilantro, and a pinch of salt and pepper until smooth.
- Slice the cucumbers into thin rounds (about 1/8 inch thick) and pat them dry to remove excess moisture.
