Method
 

Cooking Instructions
  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear in a skillet for 3-4 minutes on each side until golden brown. Remove and set aside.
  2. In a bowl, combine BBQ sauce and honey. Mix until smooth.
  3. Toast uncooked long-grain rice in the skillet drippings over medium heat for 1-2 minutes.
  4. Pour chicken broth and half of the sauce over the rice. Mix well and combine with the chicken back in the skillet.
  5. Cover skillet and let simmer on low heat for 15 minutes. Add mixed vegetables and cook for another 5 minutes.
  6. Let BBQ Chicken Rice sit covered for 5 minutes before serving garnished with chopped green onions.
