- Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear in a skillet for 3-4 minutes on each side until golden brown. Remove and set aside.
- In a bowl, combine BBQ sauce and honey. Mix until smooth.
- Toast uncooked long-grain rice in the skillet drippings over medium heat for 1-2 minutes.
- Pour chicken broth and half of the sauce over the rice. Mix well and combine with the chicken back in the skillet.
- Cover skillet and let simmer on low heat for 15 minutes. Add mixed vegetables and cook for another 5 minutes.
- Let BBQ Chicken Rice sit covered for 5 minutes before serving garnished with chopped green onions.
