  • 1 ripe Avocado
  • 1/2 cup Greek yogurt or dairy-free yogurt
  • 2 tbsp Lime juice or lemon juice
  • 1 clove Garlic omit if preferred

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine fresh or canned salmon, panko breadcrumbs, Parmesan cheese, egg, parsley, minced garlic, lemon juice, salt, and pepper. Mix until just combined.
  3. Form the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.
  4. Bake in the preheated oven for 15 to 18 minutes until firm and golden brown.
  5. In a blender, combine avocado, Greek yogurt, lime juice, and garlic. Blend until smooth, adding water for desired thickness.
  6. Serve the meatballs warm with the creamy avocado sauce for dipping.
