Ingredients
  

  • 2 large russet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped (optional for garnish)

Method
 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Wash and scrub the potatoes thoroughly. Cut each potato in half lengthwise, then cut each half into wedges (about 8 wedges per potato).
  3. In a large bowl, combine the olive oil, garlic powder, onion powder, oregano, paprika, salt, and black pepper. Add the potato wedges and toss until they are evenly coated with the seasoning mixture.
  4. Spread the seasoned potato wedges in a single layer on the prepared baking sheet. Make sure they are not overcrowded for even cooking.
  5. Bake in the preheated oven for 25 minutes. Remove from the oven, sprinkle the grated Parmesan cheese over the wedges, and return to the oven for an additional 10-15 minutes, or until the potatoes are golden brown and crispy.
  6. Once done, remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired before serving.
