Step-by-Step Instructions

  3. In a large mixing bowl, whisk together the eggs. Gently fold in blended cottage cheese, Parmesan cheese, fresh chives, garlic powder, paprika, salt, and pepper.
  4. Add bell peppers, spinach, and sun-dried tomatoes into the egg mixture. Stir gently to distribute.
  5. Pour the mixture into the prepared baking dish, spreading it evenly. Bake for 15-17 minutes until edges are set and center jiggles slightly.
