Meatball Preparation
- In a large mixing bowl, combine ground chicken, ricotta cheese, chopped spinach, gluten-free breadcrumbs, and egg. Sprinkle in desired seasonings and mix gently until just combined.
- Take a generous handful of the mixture and shape it into uniform meatballs, the size of golf balls. Place them on a parchment-lined baking sheet with space in between.
- Preheat oven to 400°F (200°C) and bake meatballs for 20-25 minutes until they reach an internal temperature of 165°F (74°C) and are golden-brown.
Sauce Preparation
- While meatballs bake, in a saucepan over low heat, combine heavy cream, minced garlic, and grated Parmesan cheese. Stir continuously for 5-7 minutes until melted into a smooth sauce.
- Once meatballs are done, gently transfer them to the Alfredo sauce and toss until well-coated. Serve hot.
