  • 1 large Egg For vegan, use ground flaxseed.
For Flavoring
  • 2 cloves Garlic Use more or less to taste.
  • 1 tbsp Dried Oregano Use fresh herbs as a substitute.
  • 1 tbsp Dried Basil
  • 1 tsp Salt Adjust to preference.
  • 0.5 tsp Pepper Adjust to preference.
For the Sauce
  • 2 cups Marinara Sauce Homemade or store-bought.
  • 1 tbsp Olive Oil Can substitute with avocado or canola oil.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna sheets in boiling salted water for 8-10 minutes until al dente.
  3. Sauté minced garlic in olive oil, then add kale and cook until wilted.
  4. Mix pumpkin puree, ricotta, half mozzarella, egg, oregano, basil, salt, and pepper in a bowl.
  5. Spread cheese mixture on lasagna sheets, add sautéed kale, and roll tightly.
  6. Cover the roll-ups with marinara sauce and sprinkle with remaining mozzarella and parmesan.
  7. Cover with foil and bake for 25 minutes; remove foil and bake an additional 15-20 minutes.
  8. Let roll-ups cool for 10 minutes before serving; garnish with herbs if desired.
