- Preheat your oven to 375°F (190°C).
 - Cook lasagna sheets in boiling salted water for 8-10 minutes until al dente.
 - Sauté minced garlic in olive oil, then add kale and cook until wilted.
 - Mix pumpkin puree, ricotta, half mozzarella, egg, oregano, basil, salt, and pepper in a bowl.
 - Spread cheese mixture on lasagna sheets, add sautéed kale, and roll tightly.
 - Cover the roll-ups with marinara sauce and sprinkle with remaining mozzarella and parmesan.
 - Cover with foil and bake for 25 minutes; remove foil and bake an additional 15-20 minutes.
 - Let roll-ups cool for 10 minutes before serving; garnish with herbs if desired.
