- Pour about 2 cups of apple cider into a medium saucepan. Set the heat to medium and let it simmer for 20-30 minutes, stirring occasionally, until the cider reduces by half.
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large mixing bowl, cream together ½ cup of softened butter and 1 cup of brown sugar using an electric mixer until light and fluffy. Add in 1 large egg and 1 teaspoon of vanilla extract and mix until just combined.
