Ingredients
  

  • 2 large boneless skinless chicken breasts (about 1 pound total)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 slices cooked bacon chopped
  • 1 cup fresh baby spinach
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup honey mustard dressing

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together garlic powder, onion powder, paprika, salt, and black pepper. Rub the spice mixture all over the chicken breasts.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 4-5 minutes on each side until golden brown.
  4. Remove the skillet from heat. Layer the chopped bacon over the chicken, followed by the fresh spinach and then the shredded Monterey Jack cheese.
  5. Drizzle honey mustard dressing over the top of the cheese.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Remove from the oven and let rest for 5 minutes before slicing and serving.
