Ingredients
  

For the Chicken
  • 1 lb Boneless, Skinless Chicken Thighs Can be swapped for chicken breasts.
  • 1/4 cup Soy Sauce Use tamari for gluten-free.
For the Sauce
  • 1/4 cup Honey Can be replaced with agave or maple syrup.
  • 2 tbsp Rice Vinegar Apple cider vinegar works as a substitute.
  • 2 tbsp Sriracha Adjust for your spice preference.
  • 1 tbsp Cornstarch Can be replaced with arrowroot powder.
  • 1/4 cup Water No substitutions necessary.
  • 1 tbsp Sesame Oil May be omitted or replaced with another light oil.
For the Vegetables
  • 1 cup Red and Yellow Bell Peppers Can substitute with green peppers or zucchini.
  • 1 medium Onion Shallots can be used for a milder flavor.
  • 2 cloves Garlic Fresh minced garlic is best.
  • 1 tbsp Ginger Fresh is ideal, ground works in a pinch.
For Garnish
  • 2 tbsp Green Onions Slice thinly for garnish.
  • 1 tbsp Sesame Seeds Optional, but highly recommended!
For Serving
  • 2 cups Cooked Rice Consider quinoa or noodles as alternatives.

Method
 

Directions
  1. Marinate your chicken thighs in a large bowl with soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Let it sit for 30 minutes to 2 hours.
  2. In a small bowl, whisk together remaining soy sauce, honey, rice vinegar, sriracha, and water. Set aside.
  3. Heat skillet over medium-high heat and add olive oil. Allow it to warm for about 2 minutes.
  4. Add the marinated chicken to the hot skillet, sear for 5 to 7 minutes on each side until golden brown.
  5. Remove chicken and let it rest. In the same skillet, add more oil if needed and sauté onion and bell peppers for 5 to 7 minutes.
  6. Return sliced chicken to the skillet with vegetables, pour the prepared sauce over everything, ensuring it's evenly coated.
  7. Reduce heat to medium and let simmer for 3 to 5 minutes until the sauce thickens.
  8. Serve over cooked rice and garnish with green onions and sesame seeds.
