- Marinate your chicken thighs in a large bowl with soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Let it sit for 30 minutes to 2 hours.
- In a small bowl, whisk together remaining soy sauce, honey, rice vinegar, sriracha, and water. Set aside.
- Heat skillet over medium-high heat and add olive oil. Allow it to warm for about 2 minutes.
- Add the marinated chicken to the hot skillet, sear for 5 to 7 minutes on each side until golden brown.
- Remove chicken and let it rest. In the same skillet, add more oil if needed and sauté onion and bell peppers for 5 to 7 minutes.
- Return sliced chicken to the skillet with vegetables, pour the prepared sauce over everything, ensuring it's evenly coated.
- Reduce heat to medium and let simmer for 3 to 5 minutes until the sauce thickens.
- Serve over cooked rice and garnish with green onions and sesame seeds.
