Equipment

  • Large pot
  • Mixing bowl
  • Baking sheet

Method

Step-by-Step Instructions
  1. Start by filling a large pot with water and adding salt. Bring to a boil and add potatoes, cooking for about 10 minutes until fork-tender.
  2. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Once cooled, slice potatoes in half and scoop out the insides into a mixing bowl, leaving thin walls.
  4. Add bacon, cheddar cheese, and melted butter to the bowl, seasoning generously with salt; mix until creamy.
  5. Spoon filling back into potatoes, mounding slightly, and arrange on the baking sheet.
  6. Bake for about 10 minutes until golden brown and cheese is bubbling.
  7. Remove from the oven, let cool for a couple of minutes, then serve warm with sour cream and chives.
