- Preheat your oven to 375°F (190°C).
- Peel and slice sweet potatoes into thin rounds. Boil for 10-15 minutes until fork-tender, then drain.
- Layer half of the sweet potato slices in a greased baking dish, followed by half of the fresh cranberries.
- Mix heavy cream, brown sugar, cinnamon, salt, and pepper in a bowl, then pour half over the layers.
- Repeat layering with the remaining sweet potato slices and cranberries, then pour the remaining cream mixture on top.
- Top with Gruyère cheese and breadcrumbs.
- Bake for 30-35 minutes until golden brown and bubbly.
