In a medium bowl, combine the Greek yogurt, peanut butter, honey, and vanilla extract. Mix until smooth and well combined.
Fold in the mini chocolate chips and chopped nuts if using.
Line a baking sheet with parchment paper. Using a tablespoon, scoop out the mixture and drop it onto the prepared baking sheet, forming small bite-sized mounds.
Place the baking sheet in the freezer and freeze for at least 2 hours or until the bites are solid.
Once frozen, transfer the bites to an airtight container and store them in the freezer for up to 2 months.
